The History of Pizza
Pizza has a very long
history and people have enjoyed it for centuries. You
would think that the origin of pizza is Italian but on the
contrary, it is believed that the Greeks and Romans (The
Phoenicians) invented the pizza. The Greeks would bake
round and flat breads and topped it off with different
spices and herbs however, they did not use tomatoes.
Around the 18th century flat bread became introduced in
Italy and they called them quot;pizzas quot;. They were very
popular because they were somewhat cheap to make,
filling and delicious. There were no toppings on them as
we know of today. All over Naples, the poor people would
buy them from street vendors.
The Queen Margherita contributed to making pizza very popular.
When she visited Italy in 1889 to inspect her kingdom, she was
very curious about the fat bread the peasants were enjoying so
she tried it. The Queen loved the pizza very much and ordered
pizzeria shop owner Chef Rafaelle Esposito to make her several
different kinds of pizza. The Chef decided to make her a very
special type of pizza using tomatoes and mozzarella cheese and
basil (using ingredients of the colors of Italy). This was the
Queens favorite pizza.
It is not for certain that Chef Rafaelle Esposito was the
first to use tomatoes but because of the Queen's taste to it,
pizza became very popular in Italy. People started to
experiment more with pizza and add different ingredients to it
such as In Bologna, meat began to be added.
Pizza was not well know in countries America, France, England
and Spain until after World War II. While American and
European soldiers were in Italy, they started trying pizza and
loved it. When the soldiers arrived home, they started
making their own pizza.
The pizza form does not stop there. Other forms of pizza are:
Mexican Pizza, Ice Cream Pizza, Candy
Pizza and Pizza cake

You will need to make
sure you have the proper ingredients before you get started.
Cheese
Mozzarella
Provolone
Asagio
Fontina
Parmesan
Romano
Chevre
Feta
Gorgonzola, Bleu
Sauce
Marinara
Melted butter with parsley
Melted butter with garlic, rosemary, and basil

Olive paste
Toppings
Vegetables
Fruits
Meats
The Dough - For 2 Large
Pizzas
Now that we have the
ingredient list, you will need to make the dough. The
amounts below will make 2 large pizzas. You will need the
following:
1 1/2 Cups of Warm Water
2 Tbsp. of Sugar
1 Envelope of Active Dry Yeast
2 Tsp. of Salt
4 Tbsp. of Olive Oil
4 Cups of Flour
Combine Ingredients
Get a large bowl
and mix the water, sugar and yeast. Let the yeast sit for
10 minutes. A foam should form at the top. The foam at the
top is critical to making a proper pizza. Add the salt and
Olive Oil. Lastly, add the flour and only add one at a
time. In between cups, mix the flour well.
Knead the Dough
Kneading involves
folding the dough in half over and over. Once all the
flour is added, continue to knead and smash the dough in a
ball and fold it over. The ball should not be too dry or
too wet. Continue to repeat the process for 5 minutes.
Let the Yeast Grow
Place the dough in a
clean bowl and lightly add some oil over it and spread it
around with your hands. You will then cover the bowl and
set it in warm place. The yeast will grow and get bigger
and should get twice as big (approximately 40 minutes).
Prepare The Toppings
As you are waiting for
the dough to grow, use this time and get your toppings
together. Cut your vegetables and cook the hard vegetables
that the oven won't cook well enough. Always pre-cook your
meat as well.
Cool The dough
After 40 minutes when
the dough is done growing, take it out of the bowl and fold
the edges inward, under the dough. Do this a couple of times
and then cut the ball in half (which makes two pizzas). You
have the option to cool the dough down (it is not necessary
however working with cool dough is easier).
Shape the Dough
You will now shape the
dough into a circular shape. The circle should be around the
same size as the pan you will be cooking it on. The steps
below will describe the proper way to shape the dough to get
the dough ready for the toppings .
Flour Work surface
Lightly dust the
surface you will be shaping the dough with some flour or
corn meal.
Smash the Dough Ball
Get your dough ball
and smash it on the surface with the palms of your hands.
Make the ball twice the size it was before.
Rotate the dough
Take the dough and
place it in between your palms and fingers. Smash the
dough with the other hand and rotate the dough
counterclockwise. Repeat this process several times. The
dough should have flat edges.
Stretch Out the Dough
You will need to
stretch the dough out into an even shape. Sprinkle more
flower if the dough does not move easily. Rotate the dough
clockwise and push the dough in the opposite direction -
outward. Once you spread out one section, move in
increments to the next section. You can experiment with
tossing the dough to stretch it out but this may be
difficult to do for the first time pizza maker.
Put Toppings on The
Dough
Pre-heat the oven and
place the dough on top of the cooking pan. To avoid uneven
cooking, spread the toppings evenly. Check the pizza often and
make sure one side isn't burning. if one side it rotate the
pizza in the oven. Also, don't overdue the amount of
toppings you put on the pizza.
Cook, Cut and Eat the
Pizza
When the pizza is
slightly brown on top, it is usually done. It typically takes
10-15 minutes to cook one. Take it out and let it cool.
Cut the pizza with a pizza-cutter or sharp knife. Eat
and enjoy your homemade pizza!

Pizza and Your Health
You will be happy to know that pizza is a nutritious meal.
An ingredient found in tomatoes called lycopene can reduce
the risk some cancers. In a study of 8,000 people, those
who ate pizza once a week found that esophageal cancer was
reduced by 59%, colon cancer by 26% and mouth cancer by
34%.
When a pizza (of whole wheat dough) is grilled at high
temperatures, Antioxidants increase. Antioxidants help
make cells stronger and protect against damage and some
diseases.
The problem with pizza
which is why people think of it as junk food is that too many
toppings such as cheese, pepperoni and sausage
contribute to weight gain. Cheese is a saturated fat and and
too much of it can cancel out the health benefits from the
antioxidants. However, cheese does have protein so some is
healthy to have. Try asking for quot;half cheese quot; next time
you order a pizza. Also, another problem is that people like
the taste of refined-flour dough and don't use the whole wheat
flour dough. Keep in mind that it is not just about what
you put on your pizza but how much you eat. All slices are not
equal in calories either. A 14 quot; pizza slice has more calories
(around 80 to 100) than a 12 quot; pizza slice.

World's Largest Pizza
Chain
Dan and Frank Carney
wanted to pay for college and have some extra money on the
side so they borrowed $600 from their mother and started Pizza
Hut. This was 50 years ago and who would have thought that
they would become the worlds largest pizza chain. Pizza Hut
has approximately 34,000 restaurants in the United
States, 12,000 chain restaurants worldwide and has and kiosks
in 100 countries.
In 1990, Pizza Hut opened its first store in Beijing,
China and because of the success, plans to open even more
stores. There are 250 Pizza Huts in more than 60 Chinese
cities proving what a huge market China is. The Chinese Pizza
Hut is seen as a deluxe brand. However, Pizza Hut is getting
much competition from Papa John's International Inc. who
plans to open 120 outlets a year in China. There are currently
51 Papa John's restaurants in China.
